Here are five quick toppers to add some variety to your summer
salad days. Just whisk ingredients together in a small bowl, and
season with salt and pepper.

One:  Basic Balsamic: ¼ c. olive oil; 2 T.
balsamic vinegar; squeeze of lemon juice; 2 cloves garlic,
minced.

Two:  Creamy Lemon-Poppy Seed: ¼ c. mayonnaise;
2 T. lemon juice; 2 tsp. Dijon mustard; 2 tsp. poppy seeds.

Three:  Ginger-Citrus: 1/3 c. orange juice; 3
tsp. sesame oil; 2 tsp. rice vinegar; 1 clove garlic, minced; ½
tsp. ground ginger.

Four:  Mustard-Shallot: ¼ c. olive oil; 2 T.
red wine vinegar; 1 T. Dijon mustard; 1 small clove garlic, minced;
1 small shallot, minced.

Five:  Spicy Peanut: ¼ c. peanut butter; 2 T.
orange juice; 1 T. rice vinegar; 1 T. soy sauce; 1 T. sesame oil; 1
T. honey; 2 cloves garlic, minced; 1 tsp. srirachi sauce.
