Cities BBQ’s Bacon Cheddar Grits Hush Puppies

¼ c. cream

2¾ c. water

½ c. quick grits

½ c. all-purpose flour

2 tsp. sugar

¾ tsp. baking powder

¼ tsp. baking soda

¼ c. chopped cooked bacon

¼ c. grated Parmesan cheese

2 T. grated cheddar cheese

1 can white shoepeg corn (drained)

2 T. chopped green onion

Vegetable oil or fat for frying

Put the cream, water, and grits in a pot and cook for about 10
minutes (or as directed on package). Remove from heat and cool.

Combine flour, sugar, baking powder, baking soda, and a dash of
salt. Mix in the remaining ingredients, and blend with grits to
form a batter.

In a deep skillet heat 2-3 inches of oil to 365 degrees
Fahrenheit. Drop the batter by tablespoons into the hot oil. Fry,
turning once, about 3 minutes or until golden brown. Drain the
puppies on paper towels and serve.
