You might not be able to see the attraction of this cocktail my wife, Amy, and I devised, but that’s because you haven’t had the beta-carotene from the carrot yet. Juice some good carrots, like the crunch-i-licious ones from Roots Farm. For two drinks of preternaturally glowing orange, mix three ounces of tequila, two ounces of Cointreau, one ounce of fresh lime juice, and two ounces of carrot juice. Shake with ice. Pour into cocktail glasses. Use that set of weird decorative knives your sister gave you to cut swirly carrot ornaments for the glasses.
