WHAT: On Nov. 19 and 20, Panda & Sons founder Iain McPherson and Sam Milne will take over The Manor Bar alongside Director of Bars Eliza Hoar. Panda & Sons is widely considered Edinburgh’s premier bar, with Iain renowned across the bar community for pioneering sub-zero freezing and cryo-mixology. In his in-house research kitchen, he’s developed techniques like “Switching,” “Sous Pression” and “Densing” to manipulate flavor and texture in spirits, showcased in Transcend, the bar’s current menu. Built around wholly unique freezing techniques with inimitable pours, alcoholic sorbets and ice creams, a taste of the Transcend menu will be available for the first time in CA — a special treat at The Manor Bar.
