If you’ve always wanted to learn how tamales are made, Richard Lambert’s “Secrets of a Tamale Chef” class may be for you. This is the tenth anniversary of the class, which is set for Saturday, July 18th, from 1:00 PM  to 2:30 PM at the Free Methodist Church of Santa Barbara at 1435 Cliff Drive.

According to Lambert, who founded National Tamale Day, the secret to making a great tamale is in the technique. “During the class, I demonstrate a special method we use to make our tamales extra plump and moist.”

The attendees will be served a variety of tamales and be shown how each flavor can be created at home. Class handout materials include Chef Lambert’s recipes, a listing of ingredient sources, plus tamale reheating and storage guidelines.
