Margerum Amaro: Inspired by time spent in Italy years ago — and thanks to some sangiovese raisins that he collected a couple years ago — Doug Margerum made 11 cases of this herbally infused fortified wine last year.

This second release is the next step in an evolution of his sweetly bitter digestif that’s powered by sage, thyme, marjoram, parsley, lemon verbena, rosemary, dried orange peels, caramelized simple syrup, undisclosed roots, and bark from red oak and other trees. It’s then aged outdoors, when the sun cooks it all together. Good straight after dinner or in a Manhattan.

Available at the Wine Cask. 23 percent alc./$50
