Cavolo Nero

Although it sounds like one of Sophia Loren’s costars, cavolo nero is actually kale. A hearty, very green green, it’s good for you, available at our farmers’ markets, easy to cook, and plenty yummy. You could slice the leaves up thinly and add it to the turkey soup you’ll make after Thanksgiving. Or you could just heat some olive oil, cook a bit of diced shallot or onion, add the cavolo nero cut in thirds, and let it cook, first with lid on, then off. Dump in some stock with lid off and let it steam/sweat/grow tastier.
