Hollister Brewing Company Chef Dylan Fultineer Revamps Menu

Hollister Brewing Company (6980 Marketplace Dr., Camino Real Marketplace, 968-2810, hollisterbrewco.com) brewed up a revised menu starting in March, and if you like comfort food—and who doesn’t?—then you owe yourself a visit. Chef Dylan Fultineer does nothing fussy; he simply delivers delicious food crammed with flavor, whether it be the new pork belly sandwich with hefeweizen-braised sauerkraut, apples, and whole grain mustard (it’s Oktoberfest on ciabatta) or a veggie lasagna (yep, this menu iteration has more vegetarian and pescatarian options). One of his achievements comes with its own pastry crown: a chicken pot pie that’s flaky atop and soothing and not floured-out inside. Even the fries have gotten better—almost as good as the area’s reigning potato champs to chomp at McMaster’s in Isla Vista (or Hitching Post II if you’re in the Valley). Washing it all down with Eric Rose’s fine and varied brews, from his medal-winning Gose Tiny Bubbles to his flagship West Coast IPA The Pope, only leaves you feeling that much happier you’ve come.
