Sucker for both cheese and cheesy puns that I am, it was hard to resist this brilliant gouda-like sheep cheese from Holland. But I’d like it even with a duller name. Rich and brilliantly butterscotchy without too much sweetness, this has been our default house cheese of late. It’s got that lovely nuttiness a good-aged gouda has, and the flavor lasts like a fine wine. Perfect for beginnings or endings — have a square as your morning protein with breakfast, or let it sit alongside some sherry for dessert. Available at both C’est Cheese (825 Santa Barbara St.) and The Cheese Shop (811 State St., in Paseo Nuevo).
