The dish: Owner Yvan Morin left his native France for Santa Barbara, later joined by his parents, and opened Pacific Crpes in 1997 after realizing that there was no place to get a decent crpe in town. The French Provencal decor has a warm feel with its hand-decorated and motif-lined chalkboards. Tiny vases full of fresh flowers are placed on the small tables, which are covered with colorfully patterned tablecloths. Choose from breakfast, savory, or sweet crpes that are all delicately made to order and served immediately. Creative patrons can make their own, choosing from a long list of fresh ingredients that include brie cheese, smoked salmon, prosciutto, Bechamel sauce, and spinach. Dessert crpes are filled with a variety of sweet items and range from simple butter, sugar, and lemon juice to the Suzette, orange sauce flambe with Grand Marnier.
