Bacon Cheddar Grits

Sizzling Summer BBQ Professional Side Dish Winning Recipe


2 cups yellow cornmeal, coarse
4 cups water
4 cups cream or milk (for someone not wanting all the fatty love)
1 cup cheddar cheese (more creamy than sharp is what I prefer)
¼ cup chopped cooked bacon
¼ cup sliced green onion
¼ cup Grana Padano cheese or Romano cheese
Salt and pepper to taste


Add cornmeal to water, and bring to a simmer; you will start to see the cornmeal thickening up. Then add the cream, cheeses, and cooked bacon. Cook for about 10 minutes. Add the green onion at the very end right before serving. Always serve hot and with a cheddar cheese garnish.
